Celeriac, Apple and Chestnuts Cream

I’m going to do a new series of recipes. The ones I do at work. The ones our clients like.

I start with this soup. I just made it yesterday, for a wine pairing tasting menu. It’s a nice one. Earthy and tangy at the same time. Simple decoration, even classy. I like this minimalist way of serving.

So they will be recipes I do at work, so will be the pictures. Made with my mobile phone. Not the best I could do I know.

Celeriac, Apple and Chestnuts Cream

For 4 people
Cooking time: 1 hour

  • 400g celeriac
  • 400g apple
  • 200g chestnuts
  • 1L milk
  • 50g butter
  • 5g salt
  • 5g ground white pepper
  • 20cl cream 36%

Method:

Peel and remove the seeds of the apples, dice into small cubes. Peel and dice into small cubes the celeriac. Crush the chestnuts (but keep some whole for the decoration at the end).

In a big pot, add half the butter, when hot, throw in the diced apples and celeriac and let it cook for few minutes while stirring occasionally. Add in the crushed chestnuts. Pour in the milk and 5Ocl of water. Season. Let it cook until all veggies are soft.

Blend, put through a sieve and rectify seasoning. Finish with the rest of the butter and the cream.

Serve decorated with sliced chestnuts and freshly crushed black pepper.
